Det första svenska sockerraffinaderiet, beläget i Stockholm, fick privilegier år 1647. De arbetare som gjöt sockertoppar av det kokade råsockret kom i Tyskland att kallas sockerbagare, en titel som i Sverige överfördes på tillverkarna av söta bakverk – sedan 1800-talet även kallade konditorer.
Ökningen av mängden socker på marknaden pressade successivt ner priserna till nivåer som folk i allmänhet kunde acceptera. Från att ha varit en exotisk krydda för adel och kungar kom bruket av socker därför under 1700-talet att sprida sig till borgerskapet. Nya användningsområden utvecklades med den kulinariska fantasins hjälp. Sockret började nu på allvar användas till konfektyr och i bakverk samt bl a som sötningsmedel i kaffe och te.
